Banana Oatmeal Cookies

I had five ripped bananas sitting on my kitchen counter for days, and they really needed to be eaten or they would have been tossed in the garbage.  I was too bored to eat the bananas themselves.  I was sick of making banana bread as I make it at least once every other month.  I wanted to t ry something new.  So, I googled “banana recipe.”  I saw banana cookies, banana pudding, banana muffins, and of course banana bread.  Then, I came across “banana oatmeal cookies” in the search.  Oooooooooo!  That sounds very delicious.

Off I went to the kitchen and became a baker for the morning.  The best part of baking this morning was finally being able to use the electric mixer for the first time in a year as I did not have one in London.  Electric mixers make baking so much easier and less stressful on our bodies.  Remember the work we had to do on mashing the butter and mixing it with the sugar?  It was HARD!  With the electric mixer, it took care of the hard work for me, and it gave me a big smile!

The cookies came out very delicious.  It’s very much like any other oatmeal cookies but with a flavor of banana!  I used the recipe from All Recipes, but I made a few modifications.

Ingredients:

  • 1 1/2 cups sifted all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 3/4 teaspoon ground cinnamon
  • 3/4 cup butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 3 bananas
  • 1 3/4 cups rolled oats
Directions:
  1. Preheat oven to 400F degrees (200C degrees).
  2. Mix the flour, baking soda, salt, nutmeg and cinnamon.
  3. Mash the bananas.
  4. Whip together the butter and sugar with the electric mixer; beat until light and fluffy. Add egg, mashed bananas and rolled oats.
  5. Add the dry ingredients to butter, sugar, egg, mashed bananas and oats.  Mix well.
  6. Drop by the teaspoon on a pan with parchment paper.
  7. Bake at 400F degrees (200C degrees) for 10 minutes or until edges turn lightly brown.
